Collagen Boosting Recipe By Nutritionist Gabriela Peacock

We have spoken to nutritionist Gabriela Peacock and she has given us a collagen boosting recipe: Rhubarb & Red Berry Pots.

Berries are high in Vitamin C - the hero nutrient for collagen synthesis in the body, offering antioxidant support and preventing free radical damage caused by UV exposure. As collagen is a protein, it can potentially be used by the body for other functions such as repairing muscles, so it's important to support its production with additional vitamins and minerals, such as Vitamin C.

Rhubarb & Berry Pots

Ingredients (serves 4)⠀⠀⠀⠀⠀⠀⠀⠀⠀

  •   350g rhubarb, chopped into small pieces⠀⠀⠀⠀⠀⠀⠀⠀⠀
  •   3 tbsp agave syrup
  •   1 sachet of Gold Super Blend⠀⠀⠀⠀⠀⠀⠀
  •   Juice of 1.5 lemons⠀⠀⠀⠀⠀⠀⠀⠀⠀
  •   1 tbsp water⠀⠀⠀⠀⠀⠀⠀⠀⠀
  •   40g rolled oats⠀⠀⠀⠀⠀⠀⠀⠀⠀
  •   Small handful of nuts, chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
  •   400g coconut yoghurt⠀⠀⠀⠀⠀⠀⠀⠀⠀
  •   Handful of red berries

Coat the rhubarb in the lemon juice and half of the agave and arrange in a baking dish. In a separate dish coat the nuts and oats in the water and remaining agave. Bake in the oven at 200'C, removing the oats after 15 minutes and the rhubarb after an additional 5 minutes. Leave both to cool.

When cooled, stir the Gold Super Blend powder into the rhubarb mix with a little water and then spoon the mixture and yoghurt in alternate layers into four small glasses or pots. Keep in the refrigerated and top with oats, nuts and red berries when ready to eat.
